What is Chiran Sencha (知覧煎茶)

Chiran Sencha refers to a Sencha plant grown in the Chiran region of Kagoshima Prefecture, Japan. It is a high-grade tea cultivated using the highest rated cultivars such as Yabukita, Yutakamidori, and Asatsuyu. Chiran Sencha Tea is easy to brew and has a rich and complex flavor, deep green liquor color, and sumptuous aroma.

Chiran Sencha is often harvested during the first flush in Spring, and tea plants are long and dark green just like you expect from a Sencha. Tea leaves are deep steamed to enrich the taste and reduce oxidation. However, some vendors sell mid-steamed Chiran Sencha, and it just varies just a little in characteristics.

Many drink Sencha to savor its rich taste and enjoy the refreshing aroma. Furthermore, green tea is rich in vitamin C, minerals, antioxidants, catechins, EGCGs compounds, and amino acids, which helps fight disease in your body and makes you healthier. Due to low caffeine, many prefer to drink it as a substitute for coffee.

BREWING

For the 1st infusion per cup serving:

1gram loose tea leaves and 100ml fresh water

Boil the water and cool it down for a few seconds to 80C or 180F degrees. Put the Chiran Sencha leaves in a teapot and pour in hot water. Brew for one-minute maximum just like you brew ordinary Sencha. Pour and serve. Tea has a fresh and sweet aroma, deep green color, and when it cools a bit, you can taste the mild astringent flavor.

For the second infusion per cup preparation:

Use the same leaves from the first infusion and 90C hot water. Let the leaves steep in hot water for five seconds only. Pour and enjoy less caffeine, contained tea. You can also get the third infusion by letting the leaves brew for 30-60 seconds. As you steep the same leaves multiple times, the caffeine level starts to decline. The second brew gives you mild sweetness with no bitter aftertaste, greenish-yellow color, and mellow grassy aroma.

The Chiran region in Kagoshima Prefecture sits at a particularly favorable elevation and climate for green tea — warm temperatures, ample sunlight, and rich volcanic soil from the surrounding terrain. Tea has been grown in this area for centuries, and Chiran Sencha is considered one of the country's premium Sencha appellations alongside teas from Uji (Kyoto) and Shizuoka. What cultivars are used for Chiran Sencha?

Chiran Sencha is typically made from a blend of high-rated Japanese tea cultivars, most often Yabukita, Yutaka Midori, and Asatsuyu. Some producers also use Saemidori or Asanoka. Each cultivar contributes a slightly different note — Yabukita for grassy brightness, Yutaka Midori for fukamushi depth, Asatsuyu for natural sweetness — and master blenders adjust the proportions to achieve a consistent flavor profile across vintages.

How do you brew Chiran Sencha?

For the first infusion, use 1 gram of leaves per 100 ml of fresh water. Bring water to a boil, then let it cool to about 80°C (180°F). Add the leaves to a teapot and pour in the hot water. Steep for one minute and pour fully. The cup will have a deep green color and a fresh, sweet aroma with a mild astringency as it cools. For a second infusion, use 90°C water and steep for just five seconds. A third infusion takes 30 to 60 seconds.

What does Chiran Sencha taste like?

Chiran Sencha has a rich, complex flavor that opens with fresh sweetness and umami, then develops a mellow, slightly astringent edge as the cup cools. The deep-steamed leaves give the brew a fuller body than a typical light-steamed Sencha.
